I started doing this a few years ago, and now my week is primarily all fish or meatless, with one to two days a week of meat, which was the goal :) My husband and I are not tofu people, and are no health-nuts by any means, but I do a lot of beans and rice, grilled portabella mushroom and swiss, baked potato chowder with vegetarian "bacon", and my favorite, anything with butternut squash, which seems to be a very hearty vegetable. There are some GREAT vegetarian quiches and lasagna recipes out there, plus, any vegetarian chili or chowder is still wonderful in a crispy breadbowl with a frothy ale!
